In a chalet on the Ribera del Manzanares we find this original restaurant with two small dining areas that seat a total of twenty guests. Run by two young and talented chefs, Jorge Muñoz and Sara Peral. There is no à la carte menu; guests can select from one of their two tasting menus that change seasonally. Cold meats, offal dishes, fish and game, many of them aged, smoked or matured. Stark, bare kitchen, devoid of artifice, with a refined technique that rests on the finest suppliers. Surprising wine list, with rare labels. Excellent service. An exceptional and radical project. For intrepid palates.
