Former eatery where the new Basque cuisine movement was launched by Juan Mari Arzak. Forerunner of the Spanish culinary boom. It hasn’t aged a bit. Now, with the daughter Elena at the helm, it even seems to have improved. Working from a selection of fifteen dishes, they put together spellbinding menus of three, six or eight courses. Lobster, baby squid and pigeon, among others, each better than the last. Ultra-professional service. Extensive wine list. Pricey but worth the trip. Market-fresh signature cuisine that’s constantly evolving.
