Behind the bar for twelve diners, he presents an omakase menu rooted in Japanese tradition and built around local ingredients. Dishes with impeccable presentation, quality products and a good balance of flavours. The experience ends with the preparation of a cup of matcha tea. The menu can be paired with sake.
