Run by Chef Sacha Hormaechea, this restaurant has become a Madrid icon and living piece of history since it was opened by his parents in 1971. A magical place, with a roughish charm, whose walls hold many secrets. A French-style bistro that is at the same time colourfully traditional. And an invariably fresh, natural, modern, refined and rebellious food that never fails to impress. Classics include the "lazy" omelette, the tuétano (bone marrow) and the spider crab lasagne. Old school, efficient staff. Always has a great atmosphere with all kinds of clientèle. Fantastic terrace. Booking is essential.
